Together you will gather fresh, locally sourced produce, meats and wines to prepare a classic Burgundian meal. Catherine's expert guidance will ensure you are comfortable taking on the role of chef for a day.
Typical Burgundian dishes
A few examples of dishes we might create are:
-Gougères: the famous Burgundian cheese balls. These delicate, airy pastries are made with pâte à choux dough and filled with a rich, melted cheese, usually Comté or Gruyère. Catherine shows you the perfect technique to achieve that light, crisp texture and savory flavor.
-Oeufs en meurette: this delicious and typical Burgundian dish consists of poached eggs served in a rich, red wine sauce with mushrooms, bacon, onions and herbs. This is truly a perfect reflection of the region's love of combining simple ingredients with complex flavors. Led by Catherine, you will learn how to master the delicate balance of flavors in this traditional meal.
-Boeuf Bourguignon, a rich beef stew simmered in red wine, usually served with mashed potatoes or fresh pasta. And why not use wild boar meat instead of beef?
-Coq au vin, a flavorful chicken dish cooked in Burgundy wine, vaal with mushrooms, onions and bacon.
These last 2 dishes reflect the region's tradition of slow cooking, with wines from nearby vineyards adding depth and complexity to the flavors.
